Keynote Address: State of the Industry & Looking Forward!

Lynn Wachtmann, IBWA President

IBWA Chairman Lynn Wachtmann (Maumee Valley Bottlers) will provide a summary of the bottled water issues that IBWA is working on at the state, local, and federal level. Among the matters Lynn will discuss are:

complying with the new FDA regulations implementing the Food Safety and Modernization Act (FSMA), IBWA efforts to defend the safety of BPA, attempts to ban the sale of bottled water, assisting IBWA members with plant siting and permitting, and promoting the importance of bottled water as a healthy hydration beverage.

Lynn was born in Napoleon, Ohio. He graduated from Four County Vocational School, majoring in electrical contracting. He is the co-founder of Maumee Valley Bottlers, which began selling bottled water in 1994. He is also the co-owner of RY Mar Water, which is a Culligan company. Lynn served for nearly 30 years in the Ohio legislature. He was a member of the Ohio House of Representatives from 1985-1996, a member of the Ohio Senate from 1997-2004, and he again served in the Ohio House of Representatives from 2005-2014. Lynn serves on various not-for-profit and corporate Boards. He is currently semi-retired and enjoys giving back to the community and serving others. He has two children, Cory and Aaron, and a granddaughter, Taylor.

Texas State Department of State Health Services Final Rules on Food Safety Standards: Update (1 CEU)

This session will provide an update to the The Texas Department of State Health Services’ adopted amendments to its food safety regulations, including those which address bottled drinking water. Among many other revisions, the amendments incorporate by reference “21 Code of Federal Regulations Part 129, Processing and Bottling of Bottled Drinking Water, as amended”. The amendments also incorporate state drinking water standards for public and nonpublic water sources and specify safe practices by plant employees.

The Waiting is Over! FSMA is Coming Very Soon (4 CEUs)

Chris Dunn, DunnWorks, Atlanta, GA

This session will start off with an update on what the FDA has recently released that could impact your bottling plant. This will include multiple “Guidance Documents” where the FDA has put into writing some of their expectations on how they are interpreting and training inspectors on Preventive Controls. Then

we’ll review some of the document templates that are available to participants. We’ll pay special attention to making sure everyone is comfortable with their:

  1. Preliminary Steps
  2. Recall Plan
  3. Supply Chain including Supplier Information Forms and Supply Chain Preventive Controls when you have someone co-manufacture product that has your brand on it.
  4. Validation of your Ozone, Fluoride, and UV Preventive Controls (including excel sheet to do your own calculations).
  5. Environmental Testing: the who, what, why, how, how much, and how expensive.
  6. Using an internal audit program to get ready for government inspections.

You are also encouraged to bring your “work in progress” Food Safety Plan. There will be a sign-up sheet with times available to meet one-on-one with Chris to review your documents and discuss any situations unique to your plant at no extra cost.

Chris is a 43-year veteran of the beverage industry and holds a Bachelor’s degree from the University of Denver and a MBA from the Goizueta Business School at Emory University in Atlanta, Georgia. For over 20 years Chris has been involved with bottled water and packaged ice trade associations around the world and is a past chairperson of IBWA’s Communications Committee and Water Coolers Europe Environmental Sustainability Committee. Dunn is currently Treasurer of the International Council of Bottled Water Associations and Director the Mid-America Bottled Water Association. He is designated by Water Quality Association as a “Certified Water Specialist”, certified in HACCP, an SQF Practitioner, and qualified auditor for NSF.

Filtration Practices & How They Tie to FSMA & HACCP Requirements (1 CEU)

Robert (Connor) Rojina, Donaldson Company

During this session you will learn how proper modern filtration techniques and guidelines can help meet current best practices as well as requirements of FSMA as part of a required HACCP and HARCP plan, while also providing a lower cost of ownership through effective planning and use.

Connor Rojina is an Applications Engineer in Donaldson Company’s Process Filtration Division and an actively involved member of 3-A Sanitary Standards, Inc., and CAGI. He is highly experienced in technologies, applications, and regulations related to liquid filtration, culinary steam, and sterile air production in the food and beverage industry.

FSMA for Suppliers (1 CEU)

An overview of the new FDA Preventive Controls and how they apply to Suppliers. We’ll discuss the FDA’s definition that classifies Food Contact Materials as Food, highlight the GMP’s that are most applicable to suppliers (including equipment manufacturers) and touch on how the Foreign Supplier Verification Program will impact suppliers when their materials

contain raw materials, ingredients, and components from outside the United States.
